Question / Help Extremely choppy stream, but not with classic

I've spent the last 2 months streaming xbox one on OBS classic via Twitch with no problems at all. I've recently tried to make the switch to OBS Studio but my stream is choppy, both gameplay feed and webcam. I'm currently streaming via a Magewell USB-HDMI dongle into a windows 10 PC with Log below. My processor is not even hitting 45% so I assume it's a mistake i've missed in settings. Any help is greatly appreciated.

There isn't a streaming session in your log for us to be able to see what is happening. Can you upload a log that has a streaming session, if you want to check you'll find this line in the log:

==== Streaming Stop ===============================================

Ok, so i've gathered more information, local recordings are perfect with no issues whatsoever but as soon as i stream to twitch with obs studio, everything gets very choppy, here is my most recent log file including both a local recording as well as a stream to twitch. https://gist.github.com/0ccb8d3af5aff8084c9b3c99a34a4d82

You need to set your NVIDIA GPU as preferred graphics processor in the NVIDIA control panel.
