There's the Auto-Config Wizard in the Tools menu. It will provide a solid starting point for settings based on your hardware.
After that, a tutorial series like the one put out by Nerd or Die a few years back will still be relevant, and give foundational knowledge on how to use the software. Beyond that, it tends to come down to messing with it and seeing what works, preferably on a fresh Scene Collection and Profile (menus at the top of OBS). That or doing a LOT of reading.
EposVox also has a somewhat-outdated OBS Master Class video series on Youtube, if you have a few days to invest.
You know Ferret, a lot of these tutorials floating around are outdated...For basic stuff getting familiar with the program they are O.K.
Because OBS doesn't have an 'UNDO' feature--- I do most of my playing around in a new scene that I can just delete if it gets messed up.
I understand what you mean though...
Another great youtube channel is "Gaming careers", for more specific settings on OBS.
In general, avoid videos that try to make claims such as "THE BEST SETTINGS FOR TWITCH" or all variations of the infamous "record in 240FPS for smoother videos".
