Question / Help Encoded video very choppy. Videos were fine before, now all of a sudden videos are choppy

I posted a video onto YouTube, demonstrating the issue.

The game is running at a steady 65 frames per second, however, there is very occasional lag/stuttering in the video.

In the description of the video you will find a summary of what happened, as well as my OBS settings and three logs. One log from version 19.0.2 containing the error, one log from version 18.0.1 also containing the same error, and one log from version 18.0.1 that does not contain the error.

I noticed a few other posts and how instead of saving to MP4, I could save to FLV

But the problem is I would have to convert FLV to MP4 somehow, which would lose some quality. The video isn't great quality as it is, that's not an option for me.
(I would have to convert it to MP4 because I use WMM to edit my videos. I'm a broke boy and my antivirus goes ballistic at every crack I use for Sony Vegas lmao)

Also, OBS Classic works just fine but will completely crash my Minecraft if I go into fullscreen. A whole different bug report, but OBS classic isn't even supported anymore.

Also, regarding OBS being completely fine before this happened, you can find perfect proof in my past videos. Absolutely no stutter like this whatsoever. It just randomly started happening, amazing!

Also, need I remind you that when recording, the game is completely fine. It's just the video file that is very choppy. OBS also very frequently says "encoding overloaded". This is really weird because I have not changed my settings at all in months, than all of a sudden this happens.

Nevermind, it's working again for some reason. I have absolutely no clue what happened, my settings are still the same, but it's working again.

To say the least this software is VERY, VERY buggy.
