Elgato Video Capture - no audio

I'm converting VHS PAL tapes to .mov files.
I have the Elgato Video Capture device, connected by RCA to the output of a VCR, input to laptop via USB.
Using the Elgato software, I'm getting good audio, but there's a bug when recording - audio stutters - so I'm trying to do it with OBS.
Video is coming through fine, but I get no audio in OBS.
Saw a lot of videos on youtube explaining how to turn on "monitor and output" on the devices audio channel - I've done all that and still don't get audio.

I am actually dealing with a similar issue. Were you able to find some answers? I am attempting to use the Elgato Video Capture Device to stream old Nintendo 64 games. I can get the video to work no problem but the audio doesn't always come through. Even when the audio does work on OBS it's because I've cycled through the same like 3 or 4 options over and over again until it magically works, but even then I can't hear anything on my end and my audience can. I've also played with the "monitor and output" thing you've mentioned but it doesn't even seem to have effect.
