Editing

I have searched all over and can't find anything about how to edit while recording.
I have used OBS to make instructional videos, but I've had to do it in one take. Is there any way to rewind the recording and start again? Have I missed that tutorial?

OBS is a live broadcasting/recording tool. It's no video editor. Each time you stop/start record something, you create a new video. If you just let the recording continue, you append to the already recorded video.
If you intend to create instructional videos, it's probably the best approach if you just record whatever you intend to show, and repeat stuff on the fly you don't get right the first try. Then load the resulting video into a video editor and separate the scenes and cut out the bad stuff.

By not having to do everything in one take, you relieve yourself from quite some stress. Make a concept which parts/chapters should be one take, but plan to have cuts and scene switches.

Here is a suggestion - Record the individual segments using OBS. Then create an OBS setup with each individual segment as a scene by pulling the video in. Set up auto transitions and then play the clips in order, again recording them to the drive. This will save you the trouble of using a separate editor.
