Question / Help Editing Videos. Keeping OBS Out of the Videos?

Hi all. I'm new to OBS and I've got a couple questions that I'm hoping someone might assist with.

1. How can I edit the video that is created? Meaning that I want to go back and add in video text later to help explain the material that was covered. Or maybe overwrite a portion of the audio track.
2. How can I prevent OBS from appearing in the video? Even if I minimize it and just use the system tray to start & stop recording, the video still shows the tray menu.
