Digitalizing VCR out

Has anyone successfully captured video and audio from a VCR? I have a Intel iMac (2019) with OS 26.3 using a SoundBeaast upscaler with HMDI output to a El Gato capture card. I can successfully capture with Quicktime and VideoPad but have limited output formats. I can capture the video but not the audio with OBS (current version) no matter what I try. Surely I must be missing something. Any ideas or suggestions?

Looked at your log, OBS is picking up the Elgato as a video source but there's no audio device listed alongside it. If the SoundBeast upscaler outputs audio embedded in the HDMI signal, the Elgato should pass it through as a separate audio input. Go to System Settings > Sound > Input and check if the Elgato shows up there at all. If it does, add an Audio Input Capture source in OBS and select it manually. If it doesn't show in system audio inputs, the upscaler might be stripping the audio from the HDMI signal before it reaches the capture card.
 
Thanks for suggestions. Both El Gato and SoundBeast are listed in sound Inputs. I have tried adding both as audio sources but no audio makes it to the recording or headphone monitoring. With the same hardware devices Quicktime both records and monitors video and audio. VideoPad recording software records both video and audio but does no allow monitoring. Unless I am wrong the problem is either in my settings or OBS itself. I would like to use OBS as it would allow me to output in aspect ratio and encoding directly without having to do a software conversation. Any further suggestions would be most welcome. Thanks
