Correct settings for mid 2015 mac book pro (base 13 and high specs 15)

Dear OBS community, first of all just let me say thanks to all the people that contributed to the project. I've been using it on anything from super old laptops to workstations and ever raspberry Pis with great satisfaction to the point where it has become my default choice even when i just need a compressor on my microphone.

I am however unable to find settings to smoothly record on macs. More specifically on a mid 2015 macbook pro with discrete graphic (Catalina) it has in the past months been a slideshow. I've attributed to extreme thermal throttling (CPU drops to 0.9GHz and GPU to 300MHz) and ordered some thermal pads, aluminum bars, copper shims to try and mod the cooling system .... but that's another story and for now I did not touch it. So i assumed it was normal for a mac to be slow. That was until I tried to install obs on my friend laptop to allow her to record lectures (base 13 mid 2015 model with Big Sur) ... and it was a slideshow... but it didn't make sense as that pc is low power enough that throttling is not really understandable.

So to understand what was going on i tried the default screen recorder included in macs (cmd+shift+%) and it manage to record 3360 × 2100 at 20fps with little to no slowdown (beware in obs i was trying to record on the base mac 720p30 with hardware encoding at 2.5MBits). Now we can all agree that I don't need that resolution but rather prefer a higher framerate..... and maybe I would like to use obs due to its amazing flexibility.

For audio I do have both black hole and soundflower on both laptops (and maybe even Ishowu on one of them). The reason is that every now and then one stops working and I quickly change audio source to make sure to have audio anyway.

Do you guys have any suggestions about what I should change to try and improve my OBS experience on mac?

Update, by taking a look at the workarounds of other users it seems that there is a bug in the way windows are recorded on mac. So the only viable way to recorder the screen is to remove all window sources (remove not just disable). This makes the framerate skyrocket from 1fps to 30fps both at 720p and 1080p. This however severely limits what I can do because it means that I cannot record the content of a window while editing a document. Does anybody know how to fix window capture on mac?
