Should we call into the call and make that a source? Should we get the website hosting the call and make that the audio source?

It's hard to be more specific with an answer if you don't know how you're actually doing the call.
Whatever software you'd be using for the call needs to send its audio somewhere for it to be heard.
For OBS to include that audio, you need to add that same device as a source in OBS.
If your calls are being done in Skype, you can use Skype for Creators that sends its output (audio and video) as NDI, along with the NDI plugin for OBS.

Just about any other solution, no matter what it is, is going to send audio in Windows to your default output device, so you want to capture that.
