Question / Help Choppy local recording Help!

Hi i am new to this software and i am trying to record some game play for my YouTube channel and the recording is very choppy.

Try Intel's QuickSync as encoder instead of x264.

Your CPU can't keep up, I had a look at your settings and to be honest they don't really make sense to me. Can you try the settings documented here and see if it makes a difference, I doubt it will but worth a try as is testing with QuickSync and NVENC as the encoder if they are available.
