Audio is my weakest area of knowledge, so commenting to help get you started
With recent update to OBS v26, lots of support requests on Open Source software (ie no paid support staff)... hence, I suspect, why the delay or lack of responses in this forums, at times.
With that said,
1. search this forum on audio refresh rate, specifically keeping all of your audio on same rate (not mixing 44.1 & 48Khz [48000hz]). Numerous recent posts on how to address that

3. General thought without a log to look at
- have you tried recording locally (not streaming) and checked audio quality there? ie, are you _SURE_ it is in the streaming that problem is occurring? I'm not doubting you, just don't want to assume too much so covering some basics
- are you running a bunch of audio filters, etc?
- if yes, how closely are you watching your PC resource utilization levels?
- have you tried turning off those filters/effects to see if that eliminates audio issue?
- Or maybe a 3rd party audio interface?
