Question / Help Changing recording path affect video quality for a local recording???

Hi. So a Couple of days ago I started recording some Assassins Creed Odyssey, and I checked the footy to make sure all was well, and everything looked amazingly perfect for me.

Intel Core i9 9900k
GTX 1060 6gb
16gb ram
1080p monitor 74hz

Settings:
recording to my evo 250gb SSD
Encoder - NVENC H.264 (new)
Rate Control - VBR
Bitrate - 40000
Preset - Max Quality
Profile - High

These were the setting I used when everything was running so damn smooth, just the other day.

I got a new monitor, (1080p 144hz) went back to record some more, and all hell broke loose.
So my SSD ran out of space and I had to move all of my footy to my hybrid 2tb drive, well the footy got corrupted so I had to re-record everything.
So the only thing that I changed was I hooked up the new monitor, changed the recording path to the 2tb, and started recording again.

I go to run the footy back, and the video is basically a slide show, skipping terribly like it used to when i had a 5th gen i5, but the audio is fine.
So i checked CPU usage and in obs it's slim to none, and the game is about 50%. Should be running fine. I didn't think it was the game my pc couldn't handle, but I ran a test. Turned all of the graphics settings all the way down in ACO and tried again in...slide show, no change at all. I then tried switching NVENC to x264 and running that at 20000 bit rate, CBR, with CPU at ultra fast, same thing, slide show. Then I tried changing the recording path back to my SSD because that's the only thing I changed. That stopped the skipping issue in the video, but now the video quality is very pixelated and looks like garbage, smooth running garbage with mild frame drops every once in a while, but garbage, probably because I switched to x264 and just haven.t got the right settings keyed in.

Will changing the recording path from my SSD to my Hybrid 2tb really make that big a difference? Changing that is the only thing that got rid of the slide show effect. If not, what am I doing wrong here, I am at a loss.

The hybrid HDD might not have enough I/O bandwidth to record properly, especially if it's fragmented and using SMR. In general you should use CRF / CQP instead of CBR for recording.
