If I was to make a recording (not a stream) in a scene with the two sources 1. Game capture 2. A webcam, and then upon watching the stream I decide that I want to have this video without my webcam displaying and only have the game capture, how would I go about this ?

You wouldn't. You can't remove a video source from a recording that way.

You could though just turn off / toggle off the video source in the scene for the webcam.

The video recording isn't layered like a photoshop PSD file once it's recorded to disk. It's a flattened png at that point basically.

You can if its not already recorded, if its already in mp4/mkv then no you can't as you say.
