Can only see one window within main window

I am new to OBS and noticed that the layout of OBS screen that I see on a YouTube demo video is different then on my laptop, instead of multiple screens with a dark outline, I only get one screen within the main screen.. Wonder why this is?
Has anybody else have this and if so, can you still work it ok? My laptop has been updated recently though it is from 2012 - still working fine, so keep it going :-)

You have the ability to move UI elements around if you unlock the UI. By default, you should have the preview canvas at the top of the main window, with your scenes, sources, audio mixer, and control buttons below (aligned from left-to-right below, also within the main window).

To unlock the UI, go to View->Docks.
