Can i use an AMD graphics card purely to encode my stream, whilst gaming through my current Nvidia card?

So, to elaborate slightly, i currently game through my GTX1070 (8gb), and either encode the stream through that same card, or through my PCI capture card (Avermedia c985). However i have an old Radeon HD6870 (1gb) that i could potentially plug in and use to encode the stream instead...... or if i can hunt it down, i might even have my old GTX970 (4gb) buried somewhere...

Is this something that is A- achievable, and B- worth the time/effort compared to using the c985 card? I wouldn't be using the 6870 for any gaming, it would purely be plugged in and working the stream for OBS...

Use nvenc with your gtx 1070 and physically remove any other GPU. Don't use a capture device to capture video from the same PC. Use a capture device only if you need to capture a console. This is the most efficient setup. Other setups, other/more GPUs don't help - they result in less performance and lower quality, actually.
