I've filed a bug report in Mantis: https://obsproject.com/mantis/view.php?id=964, but I figured I should also post here in the forum. Basically, connecting and un-connecting monitors seems to cause the fullscreen projector display list to get out of sync. Ultimately, I run into an issue where Windows knows that there are two screens, but the context menu only lists the primary one.
