You need to do more.
When you're recording, limit your In Game & Monitor to 120 FPS. 144 will cause stuttering.
Fix this, create more Scenes. (1) Game Capture or Monitor Capture per Scene.

I didn't see an attempt to record HEVC, are you using FFMPEG? Settings?
