TL;DR - In your source list, right click on your game capture source, click transform, then fit to screen.
This has been the bane of my existence with every new version of OBS. It seems that everytime OBS updates I have issues with Game Capture not working for Minecraft. On top of that, Display Capture gives me nothing but a jittery mess.
Having tried all of the solutions I have found (run as admin, use the 32 bit version, set as a global source, etc.) with none of them working, I thought I was done and was looking or other options.
However, I finally found a solution that has worked for me:
In your source list, right click on your game capture source, click transform, then fit to screen.
For whatever reason, the Game Capture was working but filling only a 1x1px space on the canvas.
Hopefully this works for you, it's been the only thing that has worked for me.
