Question / Help Bind to IP Idea (would like input)

Hello! I noticed today that OBS now has an option to bind to an IP, which I find pretty darn neat. Whenever I stream I usually use WiFi due to the lack of ethernet connection in the room where my computer is. I recently acquired a powerline adapter, and while I can get a pretty good amount of consistency, it's simply not as fast as my WiFi. I was wondering, is it possible to use both WiFi and my powerline adapter for different things at the same time in OBS? I am thinking that I could stream to the adapter and get consistent connection so that the stream doesn't go nuts, and I can play my games on WiFi. I get around 110 down/10 up on WiFi, but with HUGE random ping spikes that crash my stream frequently. On the powerline, I get 30 down/10 up, but I never get ping spikes and I can stream really well (my gameplay experience suffers, however).

Also, please don't hesitate to tell me if I am wrong or misunderstanding something about this setting. I just had a theory based on the limited knowledge I got from looking around the advanced settings, and I would like some input before I start experimenting.
