It ends as what works best for you. Some use Discord, but to have a somehow good quality you need to pay and not always work fine, others use zoom or meet. This is for the video source.
In OBS you set a scene with only your webcam, full canvas. Then you use the Virtual Cam of OBS to send this scene for video to Discord, zoom, meet or whatever program you use. Of course, test, test, test.
Then, you can use the other program video feed to capture it full or create a scene with the camera scene and the video feed of this other program. Take into consideration that this programs tend to flip the image right to left.
Sound, very important task. Most times the other mic is low and you need to add more volume to it. Other times your sound is lower than the others and you need to lower theyr sound. Dependign on your computer capabilities you can use sound effects (compressor, eq, limiter) to help you on this and always test. If needed do corrections live while conversation is going, don't fear it.
And of course, having 2 displays is a must. This way you can see the most important things all the time.
Look at others and how they manage this interviews. Look for small and medium size streamers doing it. They're the most inventive and have the best know how.
https://ping.gg/ does an excellent job for this as it's based in the WebRTC protocol and the browser sources are designed to be funneled right into OBS to record for easy production.
