Which encoder should I choose? And what's the difference between Bicubic and Lanczos
Difference between veryfast and ultra fast?

Bicubic and Lanczos are filters used when rescaling.
Lanczos gives better image, less pixelated when you turn quickly in FPS games, for example.

Veryfast is Standard.
Superfast uses less CPU but get worse image quality
Ultrafast the less CPU, the worst image. Better do not use it.

Encoder: x264 uses your CPU
NVENC uses your GPU.

Recording: better NVENC.

Streaming: with same settings, x264 gives better quality than NVENC. OBS Studio has improved a lot with NVENC (from OBS Classic) and you get good quality with NVENC streaming.
