I have not found a solution to this myself, but I solved it by uninstalling and reinstalling OBS, however, after a day the problem came back. I do not know the cause of this problem, but I think it has something to do with USB Microphones and the audio bitrate and sample rate. Also, try not using VLC, as it can make some recordings appear choppy when they are not. Best of luck!
