Audio severely degraded

New question after support from Ubuntu 22.04.3 Failed to open NVENC codec

The audio is terrible with massive white noise over the far better quality original audio. Not sure if it's the physical wire connection to the computer, or if there's some better audio settings on OBS?
Camcorder: Sony DCR-PC101E MiniDV tape.
Connection: RCA 1 plug cable to 3 RCA male -> 3 RCA female to Capture card to USB Bus 001 Device 008: ID 18ec:5555 Arkmicro Technologies Inc. USB2.0 PC CAMERA
My Desktop Ubuntu 22.04.3 has NVIDIA X Server and GeForce NOW installed.
Software: OBS 30.0.1.
