Audio gaps when recording

I am using OBS to record audio for my church. The PC is a dedicated PC that is only running OBS (at least during the recording) it has an 8th gen i7 1.9GHz with 16GB RAM that is writing to a 256GB SSD.

My issue is that my last 2 recordings there have been large gaps where there was just dead air. For example, when i play the recording back eveything will sound good, and then the audio will drop and I will not hear anything, for up to 60 seconds, and then it will pick back up where it left off. One issue that this causes is that at the end of the recording if I stop recording as soon as the person talking is done I will end up loosing the tail end of my recording.

The recordings are generally 30min in length and the audio drop ( on the log file attached) happened at 10:53, after the drop it picks back up and the quality is fine.

What could be causing this? Is there a buffer setting that needs to be adjusted? See log file attached.
