I am looking to record minecraft java edition 1.8.9 but cant think any good settings for obs, if possible any recommendations?

Open OBS.
Go to the Tools menu at the top.
Auto-Configuration Wizard.
That said, U-variant CPUs are 'ultra-low-power' models, optimized for battery savings. It's entirely possible that system may simply not be able to handle the computing load that real-time video encoding requires.
