"An encoder error occurred while recording" fix now leads to blurry videos... sometimes

Hey everyone, the link for my most recent logfile is here.

Using a laptop with an AMD Ryzen 7 5800H with Radeon Graphics 3.20 GHz. I'm trying to record 1080p60 video from my capture card. Settings include:
  • Simple output mode
  • 6000 kbps bitrate
  • Hardware encoding H.264
  • Indistinguishable quality, all exported to mkv files
With these settings, the videos look exactly how I want them to. The problem I ran into was recording this one video that went a little over 4 minutes and 30 seconds long and I got the "an encoder error occurred while recording" message. In order to circumvent this, I changed the output mode to advanced (per some random guy's video). It worked and I was able to capture the fight I was doing in its entirety, however the video comes out pretty blurry and pixelated when there's a lot happening on screen. It doesn't look, well, 1080p at all. Here's the video in question if you want to see how the quality is. And yes, it looked like this on the raw file too before it was uploaded to YT.

Oddly enough, to now address the last part of this post's strange title, I recorded this video for testing (and another one to make sure this wasn't an isolated incident) and they do not look that bad compared to the first video linked (at least to me it doesn't. Please let me know if I also will need to get my eyes checked). Same exact settings: advanced output mode.

Now I know what you're thinking: what is bro complaining about if it's working now? And yeah, normally I'd just move on with my life but until I can expect this type of performance consistently I'm trying to figure out what's up with all the previous issues that I've been having. I can only hope this doesn't happen again but I'd still like to know what's possibly going on under the surface. Thank you!
