Try some solutions from this thread: OBS stops recording video but audio continues , it looks similar to yours.

Thanks for replying but this is not the issue I'm having. I am running the latest version of the AMF which does not have the problem in the linked thread. The resulting file from the recording I am posting about has no video whatsoever, it doesn't play in VLC at all.

Did some research and ran some recovery on it and I'm sure it's gone for good at this point. Still interested to hear any ideas on why it happened though.

What do you mean, "corrupted"? Is the file the size you'd expect if it had full video and audio data? Does it still have audio data? Does VLC try to play it, or does VLC give an error message? If it gives an error message, what error does it give?

There are a bunch of AMF errors/warnings in your log, but I don't know how to interpret them. Maybe @Xaymar can help here.

Yeah - the file size is what i'd expect. There's no error message in VLC - the file opens and 'plays' (as in the progress bar moves) but no audio or video is present and VLC displays a total time for the video of 1m37s...

I noticed those errors too and wasn't sure what it was throwing them in relation to/couldn't find any info on them. I tried a full reinstall of my graphics card drivers, OBS and Xaymar's plugin which hasn't changed things, if anything I think I'm seeing more errors now! Ha...
