2K Resolution recording for mid-range laptops?

I recorded several videos with the settings:
NVEnc H.264
2560x1440 120fps
CQP 18 Max Performance
no check, 0 GPU, 0 b-frame

but the quality is very poor and many frame skipping
What should I use?

My specs:
i7-10750H
RTX 3090 (in an eGPU box, PCIe 3.0x4)
32GB 2933 RAM
2x4TB HDD in Raid 0 Config.

I mainly record Minecraft Bed Wars and it has a lot of movements, I do not want any frame skipping and the quality must be good.
Any Suggestions? Thank you!
