Not sure if its my CPU not being strong enough but everything I've tried has either made the quality too low or the frame rate too low. Also sorry if this isn't the right place for this request but if anyone could help. Here are my logs if these help at all.

That log shows no recording attempt.

Other problems:
1> display capture sources in the same scene as game capture
2> multiple game capture sources in the same scene COLLECTION

Does this log help by chance? I also set up a whole new scene and added just the one game capture it still came out somewhat choppy though. if you need to see any of my settings i can send a screenshot of them as well

Your CPU is not strong enough to encode 1920x1080 @60fps. You have a modern Intel CPU, you want to record and not stream, so there is nothing that holds you back from using Quicksync as encoder instead of x264. In case you don't find Quicksync or QSV in the encoder drop down box, enable the iGPU in the Bios of your PC. After that, Windows should detect a new GPU, will download and install drivers automatically after reboot, and if you start OBS after that, you will find Quicksync/QSV hardware encoder available in OBS.

More: Remove all but one Display Capture sources (you have 2 different). They step onto each other.
Even more: you have a bunch of game capture sources - if you set any of them to "capture any fullscreen application", remove all of these except one. You need only one. It will automatically capture whatever is fullscreen.
