1 hour MKV video doesn't write and ends up being 1KB large on disk

I finished recording a ~1 hour video in 2560x1080 resolution at 120 FPS via NVENC in the MKV container, and it only outputted one frame. The file is 909 bytes large and doesn't have a length in Windows Explorer. I have heard that NVENC does not support above 60 fps recording, but I have recorded videos with the same settings, albeit not as long (Probably around 30 minutes.) Is there any way to recover this?. Here is my log file:
