Using OBS on a MacBook Air to record talks, panels, etc.

I would like to spec out and write up an economical system for recording the audio and video from talks, panels, etc. I'm thinking of using something like:

• a MacBook Air (etc), running Mac OS X and OBS
• Epiphan's VGA2USB or DVI2USB 3.0 to capture projected video
  
• one or more USB-based cameras and one or more microphones

Q: Can the Mac version of OBS support this sort of configuration?

Q: Any other advice, comments, or suggestions?
