I was having to restart to even open OBS after this crash. After the third time I opened the Elgato software and noticed it prompted me to select an audio out device or else it wouldn't work. Now it makes sense why OBS might crash instantly when used as a source.
This is a problem because in testing my rig and setup, I don't want an audio out device for ground loop isolation reasons, only a line in. I run the sound processing off of a second computer with CPU heavy Ableton Live to do the levels.
Now this is really a problem for Elgato, and I will be reporting this issue to them, but it would be nice if OBS has some error handling for this situation, because I can see the situation being accidentally trigglypuffed when mucking about with audio during a broadcast.
